Origin
Huila is a province in southwestern Colombia located between the central and eastern mountain ranges. The Magdalena River meanders through the entire region that is also home to Colombia’s second highest peak: the Nevado del Huila volcano. With an average temperature of 18°C year-round and fertile soil containing a variety of rich mineral resources, Huila has a vibrant agricultural industry. The descendants of indigenous groups (Piezas, Halcones and Pijaos) continue to inhabit their places of origin in this region, living in specific protected areas and other small communities.
Project
At Orbita Coffee we have chosen this coffee not only for its quality but also because it has a great project behind it. We work with importers who give importance to giving voice and opportunities to small producers whose production is very small and that is why one of our trusted importers has created Ally Core Coffees. This program, created by them, attempts to bring together different green coffees from small producers to create a profile that represents the characteristic taste profile of the region, which in this case is Huila.
The name Palmera is because the coffees in this project are named after the tree that represents the country. With this project, Ally gives the opportunity to micro-producers to have benefits and be able to process their coffees.
Processing Method
Solo son recolectadas las cerezas maduras y seguidamente son llevadas a la despulpadora. En ellas se elimina la pulpa y el café pasa por unos canales de agua hasta llegar a los tanques de fermentación. Con tal de eliminar el mucílago el café queda sumergido en agua durante aproximadamente, 24 horas. Pasado este tiempo, el café vuelve a pasar por unos canales de agua para acabar de eliminar el mucílago que pueda haber quedado adherido al grano. Seguidamente, el café es secado en patios, parihuelas elevadas o marquesinas.
